3 Easy Recipes to Make at Your Next Cinco de Mayo Party

This Friday marks the famous Hispanic holiday Cinco de Mayo. Bring our your spicy salsa and margarita mix because it's time to celebrate this weekend! If you are hosting a party, I've found some super delicious and easy recipes from that will be perfect at your next celebration!

1. Chicken Fajita Melts Recipe by laughingmagpie at

Prep Time: 10 minutes
Cook Time: 25 minutes
Ready In: 35 minutes

-3 tablespoons vegetable oil
-6 (6 ounce) skinless, boneless chicken breast halves, thinly sliced
-1/2 cup sliced onions
-1/2 cup sliced red bell pepper
-1/2 cup tomato juice
-2 tablespoons taco seasoning mix
-8 (1/2 inch thick) slices French bread

1. Heat the oil in a large skillet over medium-high heat. Add the chicken, and cook and stir until lightly browned, about 5 minutes.
2. Stir in the sliced onions and red peppers, and cook and stir for 5 minutes or until the vegetables are tender. Stir in the tomato juice and taco seasoning, and mix well. Cook mixture until the juice has thickened and the chicken is well coated with sauce, about an additional 7 minutes.
3. Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
4. Spread 2 tablespoons of salsa over each slice of French bread. Evenly spoon the chicken mixture on top of the salsa topped bread. Sprinkle each sandwich with 1/4 cup Cheddar cheese.
5. Place sandwiches under the preheated broiler and cook for 5 minutes or until the cheese is melted and beginning to brown.

2. Buffalo Chicken Nacho Bowl Recipe by Amanda Fredericton

Cook Time: 10 minutes
Ready In: 25 minutes

-1 pound shredded rotisserie chicken
-1/4 cup Buffalo wing sauce
-1 (16 ounce) package tortilla chips
-1 (15 ounce) can black beans, rinsed and drained
-1 (15 ounce) can black beans, rinsed and drained
-1 (8 ounce) package shredded sharp Cheddar cheese
-1/2 cup sour cream
-1/4 cup crumbled blue cheese
-1 tablespoon chopped jalapeno peppers, or to taste
-1 tablespoon chopped green onion, or to taste

1. Preheat oven to 425 degrees F (220 degrees C).
2. Combine chicken and Buffalo wing sauce in a bowl.
3. Place 1 layer tortilla chips in the bottom of a baking dish; top with a layer of Buffalo chicken mixture, black beans, and Cheddar cheese. Continue layering with remaining tortilla chips, Buffalo chicken mixture, black beans, and Cheddar cheese.
4. Bake in the preheated oven until cheese is melted, 10 to 15 minutes. Cover the nachos with aluminum foil if the top is getting too dark.
5. Top nachos with sour cream, blue cheese, jalapeno peppers, and green onion.

Ready In: 15 minutes

-4 Hass avocados, halved, pitted, and peeled
-1 yellow onion, diced
-2 tomatoes, diced
-1 lemon, juiced
-5 dashes hot pepper sauce (such as Tabasco®), or to taste
-1 teaspoon salt, or to taste

1. Mash avocados in a bowl with a fork until smooth.
Mix onion and tomatoes into mashed avocado.
3. Stir lemon juice, hot pepper sauce, and salt into avocado mixture with a wooden spoon.
